Rachelle Gauss, Chef/Cake Tailor – RGoodies, A Little Cakery

What do you do?

I bake, create, and design custom cakes for birthdays, photo sessions, anniversaries, weddings, and “just because.” I have also hosted and lead cupcake decorating parties.

What education, classes or training were helpful to you?

My grandmother was a huge inspiration growing up. She would teach me piping skills, boarder and flower piping. She always made our birthday cakes, and wedding cakes for her friends.

I attended the Culinary Arts program at The Art Institutes International, in Minneapolis, MN. From there, I worked at a bakery in Little Canada and my passion for desserts and cakes took off.

I took it to the next level when my first born turned one and made his cake and smash cake using fondant. (I had never worked with it before!) After that I started following cake groups and watching countless YouTube videos. I’ve spent hours and hours of time thinking about techniques and how to accomplish a specific design.

Why did you choose this sort of work?

I have ALWAYS had a sweet tooth and enjoy cake SO MUCH! I love that no cake is ever the same. I learn from every cake I do. I can use my art training in sculpting and shading to create life-like decorations.

What do you like best about your work?

The greatest joy I have is making people smile and tear up when they see their cake. I love creating with my hands and seeing my idea come to life. I sit back and give myself a humble pat on the back and say “I did it!”.

What advice would you give girls who want to get into your field?

Research, practice and don’t ever sell yourself short. Don’t compare yourself to others. You and your cakes are one of a kind. Only try to better yourself, for yourself.

What is an example of something you’ve had to overcome to get to where you are now?

Sleep, lol. I try to balance and prioritize my cake business, family, work, and household duties that sometimes it feels like I don’t have enough time in the day. I have to tell myself that it’s ok and I will get it done.

Anything else we should know?

I have met so many amazing people and heard so many incredible stories from clients that it make my heart full. I take those stories and experiences and incorporate them into my family.
